Curing your Roaster before Use

Before Using the Roaster

Unpack your NESCO Roaster Oven completely REMOVING ALL PACKAGING MATERIAL AND INFORMATION LABELS.

Remove Lid (cover), Rack, and Cookwell, (from heatwell) wash them and set aside.

Place Roaster Oven (Heatwell only) in a well-ventilated area. Make sure temperature knob is set at the lowest possible setting/off.

Plug in Heatwell cord to a 120 volt AC outlet. Turn temperature knob to maximum setting and “cure” Roaster Oven empty for 60 minutes (or longer) until any odor or wisps of smoke disappear. Some smoke and odor are a normal part of “curing” the element and will not reoccur in cooking use. When curing is completed, turn temperature control to lowest setting/off, unplug unit from outlet and allow cooling. After your unit has cooled, put Cookwell, Lid, and Rack back in and it is ready to use.

Do not cook food without Cookwell in place.

I have a Nesco Roaster that I purchased at least 12 years ago. I loved it!! It was great for turkeys, ribs, stew, beans, anything!! The only reason I was replacing it was because the Teflon coating was starting to come off and the roaster was getting “hot spots”. The lid had seen better days, and… well, it was just tired! The roaster I ordered was the same as my old one so I expected many years of use and enjoyment. I was soooo wrong! I received the roaster and it was very cheaply made. The lid was thinner and the metal was ripply. After two hours of “airing” it out, the smell pretty much was gone but still noticeable. I figured, oh well, nothing is made as well as it used to be made and proceeded to wash the roaster so I could use it for dinner. I didn’t want to use it the first time for Thanksgiving and have any surprises! It’s a good thing!! I made Teriyaki chicken tenders with vegetables. EVERYTHING stuck to the sides, to the point that it took major scrubbing to get it off, even after soaking over night. I was a bit surprised but figured I would have to live with it. The deal breaker occurred when I was cooking the chicken and tried to remove the lid. It wouldn’t budge. When I finally pried the lid off, the paint from the lid had melted onto the roaster, fusing the two together. The burning paint stunk to high Heaven and is permanently on the edge of the roaster. Though the roaster pan and the lid seem to have bonded, the same is not true for me. It’s going back! Paint that melts when heated can’t be safe. So disappointing and so sad!! 🙁

If you read the instruction manual you will learn to “burn in” this oven OUTSIDE” before you cook in it. It should be turned on high for one hour and allowed to burn off the protective oil used in manufacture. It will SMOKE. After that …NO Problems. Everything went just as described in the manual.
The power cord for any appliance with heating elements is always short for safety reasons. I placed the oven on a make-do table under my covered patio and used the same power extension cord I use for my table saw, grinders and other heavy duty power tools. After one hour with this oven on constant max power the molded plug and wire became soft and hot to the touch. I say this only because some people will try to use a standard household extension cord and could possibly start a fire. I have only two other minor issues. 1) The cooking well came with a paper information sheet glued to the bottom. I could not scrub the glue off. I finally used some industrial solvent to remove the glue and then had to wash the whole thing again. The cook well will not fit my sink. 2) This oven is big…I mean BIG. I do have a problem finding space near a plug to use it in my “normal” sized kitchen. And I have not solved the storage issue…yet. All in all…I would buy it again. It does a job nothing else will do.

Sidebar: One of the selling points is that you are baking in a much smaller space than when heating your whole oven and therefore you are using less power and saving money. I am not an electrical engineer, but I am not so sure about that. You are using 120 volt power, not 220 volts and therefore drawing twice the amperage.

Bought this roaster after reviewing others online. This roaster did everything it was supposed to do. Cooked our 20 pound turkey perfectly. Turkey was moist and juicy. Highly recommend this roaster. Bought it at Sears because it was .00 cheaper than online here.
