Baking steels are a new alternative to and a nice complement for your baking stone collection. This 14″ square Pizzacraft Steel Pizza Plate is optimal because metal conducts heat better than stone and it stores more heat per unit volume than stone. Both are key characteristics to creating a pizza that cooks up both light and crisp. Two suggested methods for cooking with a pizza steel are: Steel and stone: Place a steel baking plate with pizza on it on the bottom oven rack while positioning a pizza stone on the top rack a few Inch above to achieve perfectly crisp crust. Radiant heat from the stone will help to brown the top crust and cook the toppings like the elevated ambient heat of a pizza oven. Steel and broiler: Place pizza steel on a rack positioned directly below the broiler of your oven. The pizza steel will achieve a perfectly crisp crust, while direct heat from the broiler will brown the top crust and cook the toppings. Pizza steels are intended for oven use. Do not use with your grill or Pizzeria Pronto.

This review is from: Pizzacraft Steel Pizza Plate / 14″ Square – PC0308 (Lawn & Patio) Beware that this is much thinner than standard baking steels – only 1/8" inch thick and doesn’t produce the same crusts that standard 1/4" or 3/8" pizza steels are known for, like the one I got via Kickstarter. If you’re serious about getting the best crust, spend the money to get a thicker one (or go to a steel fabricator to have one cut). I’d like to take a moment to address your concerns. When we researched pizza cooking and designed this pizza steel, we were looking for a durable product that would complement a pizza stone. We also wanted to make something that our customers could use easily and which would be available at a reasonable price point. We found that a 1/8" inch thick steel gave a slightly longer cooking time than a thicker steel. However, the difference was slight — only 5 percent longer on average. In addition, we found no difference in the quality of crust baked on a thin versus a thick steel. The 1/8" steel weighs 7.6 pounds. We find that a heavier product can prove rather unwieldy. The steel is also priced reasonably — certainly at a much lower price than other pizza steels you may find on Amazon. Perhaps the following tips may improve your experience. Pre-heat the steel in the oven for 45 minutes to one hour. When you are ready to bake your pizza, center the pizza in the middle of the steel and proceed to cook your pizza according to the instructions of your pizza recipe. We recommend that you pre-heat your oven and steel at 500-550 degrees Fahrenheit, then cook your pizza for about eight minutes. We had been using all sorts and shapes of ceramic pizza stones and were sick of them cracking. I assume nothing will damage this plate! If properly preheated (usually 15-20 minutes) it makes a very crispy crust and cooks a pizza with toppings in less than 10 minutes perfectly. I so far have only used it to make pizza, but plan to use it to bake bread or rolls also. It is easy to clean and store. Definitely an improvement over the pizza stone. 0 |
